Pepperoni Penne Pasta Salad & Caputo Mozzarella Cheese
The addition of pepperoni and Caputo mozzarella cheese make this salad a light meal in itself!
Ingredients
- 12 ounces penne pasta cooked according to package directions
- 8 ounces pepperoni diced
- 12 ounces Caputo mozzarella cheese diced
- 1/3 cup Tastealotta Oregano Balsamic Vinegar
- 1 cup Tastealotta Basil Olive Oil
- 1 red bell pepper diced
- 1 green bell pepper diced
- 3 scallions diced
- 1 cup grape tomatoes halved
- 4 ounces kalamata olives pitted and diced
- 1 Tsp Italian seasoning
- salt and pepper to taste
