Cremini, Blue Cheese and Wild Mushroom & Sage Olive Oil Flat Bread
This is a simple, yet supremely satisfying flat bread that begs to be served alongside a crisp, vibrant salad.
Ingredients
  • Flat Bread Dough
  • 2 1/2 cups of all-purpose unbleached flour
  • 1 cup warm water
  • 2 Tbsp . Tastealotta Wild Mushroom & Sage Olive Oil
  • 2 Tsp . active dry yeast
  • 1 Tsp . kosher salt
  • 1 Tsp . granulated sugar
  • Mushroom Topping
  • 1 large shallot thinly sliced
  • 2 Tbsp . Tastealotta Wild Mushroom & Sage Olive Oil
  • 2 cups fresh sliced mushrooms such as Cremini Shitake, Oyster, Porcini, Chanterelle, etc.
  • kosher salt and freshly ground black pepper to taste
  • blue cheese crumbles
Instructions
  1. To make the flat bread dough, mix together the olive oil, warm water, yeast and sugar.
  2. Allow to sit for five minutes to bloom.
  3. Blend the salt with the flour and mix with the wet ingredients to form a moist dough.
  4. Knead the dough for approximately 5 minutes until a smooth dough forms, adding just a bit of flour if it becomes too sticky.
  5. Divide into 2 balls, cover and set aside in a warm place to rise until doubled - for about 1 hour.
  6. To make the mushroom topping, heat the Tastealotta Wild Mushroom & Sage Olive Oil in a sauté pan over medium heat.
  7. Add the mushrooms and sprinkle with a bit of salt to taste.
  8. Sauté until they just begin to turn a light golden brown color.
  9. Add the slice shallot and cook for an additional 2-3 minutes until the shallot is sweet, soft and gently caramelized.
  10. Adjust the seasoning as desired and set aside to cool while the dough rises.
  11. Preheat the oven to 450 degrees.
  12. Roll each dough ball into a very thin circle, approximately 8" in diameter.
  13. Place the rolled dough on a sheet pan or pizza pan (either greased with olive oil, lined with parchment paper, or dusted with cornmeal).
  14. Arrange the caramelized mushroom mixture evenly over both pieces of dough.
  15. Sprinkle each with equal portions of crumbled blue cheese.
  16. Drizzle with Tastealotta Wild Mushroom & Sage Olive Oil and additional freshly ground pepper (if desired).
  17. Place the flat bread in the preheated oven and bake for approximately 15 minutes until the cheese is melted and beginning to brown and the crust is golden brown and slightly puffed. Rotate the flat bread halfway through the baking process to ensure even cooking.
