On many major holidays, we serve ham for either dinner or lunch. Traditionally we see ham served for Easter and Christmas dinner and also large family gatherings. But what to do with leftover ham? First, ham can be frozen for up to two months stored properly, so that gives you some lead time to use our creative leftover ham recipe ideas below.

The good news with serving ham is you usually have at least the ham bone left which is a great base for a number of soups. Now that we have tantalized your taste buds with ideas for using your leftover ham, we are going to share one of our all-time favorite recipes for Ham Cheddar Scallion Scones.

Ham Cheddar Scallion Scones

Ingredients:

  • 1 - 1 1/4 cups shredded ham
  • 2 cups of all purpose flour
  • 2 tsp. baking powder
  • 1 tsp sugar
  • 1/2 tsp. salt
  • 5 ounces cheddar cheese
  • 3 scallions chopped
  • 5 tbsp. butter
  • 2/ cup heavy cream, we substitute half and half with the same results or use half cream and half half and half

Directions:

  1. Preheat oven to 400 degrees F.
  2. Shred the leftover ham and set aside.
  3. Whisk the flour, baking powder, sugar, and salt in a large bowl. Stir in the cheddar cheese, scallions, and shredded ham.
  4. Work the butter cubes in with your fingers, until the dough resembles pea-size pieces of butter coated in the flour mixture. Make a well in the middle of the mixture and pour in your heavy cream or half and half.
  5. Stir, but don’t over stir or your scones will be tough. The dough will still be a little crumbly but will press together well.
  6. Turn your dough out on a floured countertop or piece of parchment paper, using your fingertips to press the dough into a big circle. Cut the circle into 8 separate wedges.
  7. Bake for 20-23 minutes depending on your over, or until the edges are crisp but the center is still moist. Tasting is the best method to make sure you’ve got it right!
